Daring Baker Challenge: Panne Cotta and Florentines

B and I have skipped a couple of months of doing the Daring Baker Challenges, but we were finally able to get back into it this month. Just in time, too, since the challenge was definitely a good one. We had to make panne cotta (which I had never heard of before) and florentine cookies. The panne cotta was definitely the simple part of this challenge. I guess most of the time these are vanilla based, but they also gave a chocolate option so, of course, that is the one we chose. I’m not a big fan of gelatin and the panne cotta had a bit of that texture to it, but the chocolate helped a lot. My favorite was the florentines, though. For the chocolate in the middle the recipe called for melted dark chocolate. I found some Nutella in the grocery store and thought that might be a fun substitute. Definitely very rich cookies… but very very yummy.

  • Well done on this gorgeous challenge. The chocolate panna cottas look so creamy and beautiful and the florentines have that lovely lace edging. Perfect!
